Koukoumi Hotel is due to open this summer in Mykonos, Greece. The hotel has positioned itself as a go-to health and fitness destination for existing plant-based eaters & those who wish to try the lifestyle. While the ongoing coronavirus situation may delay the opening, the hotel is looking to be a go-to destination once travel restrictions are lifted.
